Hash browns with eggs

As a kid, I didn’t really understand what was it about fries and eggs that my father loved so much. I may have been as round as a balloon back then, but I have to say I actually fancied the “healthier” breakfast alternatives. Oatmeal, boiled eggs, maybe cereal and milk. Nothing fried. I mean, I would eat the fries, and the fried eggs, but they weren’t particularly enticing to me. Not to mention, that having potatoes for breakfast rarely crossed my mind.

As a teenager, I went on a high school field trip, a good 2 hours away from us. We stopped at a Burger King for breakfast where I ordered scramble eggs, pancakes, and hash browns. I took my food to their patio, but I had to go back in for some ketchup and other condiments. When I returned, I was utterly surprised to see a Goddamn bird sitting on my hash browns while eating my pancakes! What the hell! I started cursing, yelling, and throwing ketchup, salt, and pepper packs to the birds, who’d flown way beyond my reach by then. In the meanwhile, the rest of the people were looking at me from the inside of the restaurant, filled with confusion as they tried to understand the strange ritual that balloon-kid was performing behind the glass wall. Stupid birds.

My little incident didn’t bring me any closer to eating and fancying hash browns. I did, however, start making them often (in the last few years) as a quick side dish for dinner. They require minimal prep work and are done fairly quickly; more importantly, they are delicious, and low in calories, so making them is a no brainer.

For the recipe I’m sharing today, I went easy and simple; it’s my peace offering after all the overeating I’ve done this holiday season. I sautéed the hash browns with a few cloves of garlic to infuse them with that beautiful garlic flavor; I kept and ate the garlic at the end because I love to do so. I served my hash with sunny side eggs, no ketchup. I learned the lessons those birds thought me years ago.

Makes 2 servings

2 tablespoon corn oil (divided in half)
5 cloves garlic, peeled
2 medium baking potatoes (sliced in ¼ inch sticks)
4 jumbo eggs
Optional: dill to garnish

On a nonstick frying pan, heat 1 tablespoon of corn oil over medium-high heat.

Season the potatoes with salt and pepper to taste (I used about a pinch of salt and a pinch of pepper). When the oil is hot, add the potatoes and the garlic. Cover and cook until a fork easily goes through the potatoes (about 15-20 minutes), sautéing every 3-4 minutes to prevent the potatoes from burning. Remove the potatoes from the pan and save until you are ready to serve.  (Note: I keep the potatoes in the oven - warming cycle at 170F, but a pre-warmed plate should do. If you don’t mind your hash browns cooling down, just set them aside on a dish.) Add more salt and/or pepper if necessary.

Return the frying pan to medium high heat, and add the other tablespoon of oil. After a minute, add the eggs. Fry them to your liking (I did sunny side up). Top the hash browns with the fried eggs.

Optional: Garnish with dill.

Broccoli fritatta

August is usually a fun month in Cleveland, with tons of festivals I go to. You can say I like to "festival-hop" (or maybe that I'm just a festival troll, one or the other). Every year I must have my share of gyros and baklavas from the Greek Festival in Cleveland Heights, I must have some mamaliga cu branza (polenta-ish dish baked with cheese) at the Romanian Festival in Cleveland's West Side, and I MUST party at the Feast of the Assumption in Cleveland's Little Italy. But this year my tight festival schedule is bursting up with all the happenings surrounding the Gay Games (GG9) happening all around Cleveland and Akron.

Going downtown to do practically anything, feels totally different. "Gay Games" themed specials and cocktails are being served everywhere. Plus, rainbows colors look very good on this otherwise grey-ish and brick-y city. "Let the sunshine in..."

I went to a happy hour at the Horseshoe Casino last Sunday. While the regular crowd was doing its thing...

The Gay Games Happy Hour turned into a PARTY! There was socializing...

There were "Vegas' style" dancers and "Chipandeles" walking around so naturally, people were taking pictures with them. Also, the DJ had some killer mixes so the crowd went crazy dancing, and twerking...

And lip-synching...

I - on the other hand- spent my time taking bad selfies...

Monday and Tuesday, I attended some sporting events, mostly water polo. Some matches were not too exciting, but some others were amazing.

Since I'm adding all this things to my usual busy schedule, my plan for this week has been to cook foods that generate leftovers that are easy to handle. A good example was this broccoli tortilla or frittata. It was super easy to make too; I just sauteed onions and peppers, I tossed some broccoli and garlic in, and then added the eggs. The oven did the rest for me.

I had my first slice with toast and a teaspoon of cherry preserves.

And then I had the rest either on it's own, or in sandwiches. Easy!

On the road shortcut

2 tablespoons oil
1 small onion, chopped
1 red pepper, chopped
1 stalk of broccoli, florets only
5 eggs, beaten
1 tablespoon whipping cream
Salt and pepper

Preheat the oven to 475F.
Beat the eggs with the whipping cream. Season with a pinch of salt and a pinch of pepper. Set aside until ready to use.

On a heavy iron skillet, heat the oil over medium-high heat. Saute the onions and peppers until they are soft (5-8 minutes). Season with a pinch of salt and pepper as they cook.

Add the broccoli and saute for a couple of minutes, tossing often to get them coated in the oils. Season with a pinch of salt and a pinch of pepper as you toss the broccoli. Crush a clove of garlic into the pan, and saute for 30 seconds, tossing frequently.

Add the egg and whipping cream mixture to the pan. After a minute, transfer the pan into the oven and cook for 8-10 minutes, or until it settles.

Egg salad

Spring has finally arrived, and the sunny, and somewhat warmer days are becoming more common. As each beautiful day passes, I’ve been growing anxious to break away from the last of the winter restrains I have. I want to resume my biking commute, and I want to go back to my weekend rides. My bike isn’t fancy, but I love it anyway. It’s a red trekking bike, and as such is designed to alternate between city streets and rougher terrains. It’s not too fast, but that’s ok; after all, I still have some of that Southern-Puerto Rican attitude where “to rush” is not really part of our lives. My bicycle is resilient. It has carried a much heavier me for thousands of miles, and it has survived it. Several times I’ve imagined the poor thing sweating with its tongue out and begging for a break. Instead, it has given me the other chin, and behaved like a real trooper. What a bike!

So this weekend, the Saturday before Easter, I decided to take the bike for a morning spin. To be honest I didn’t go far; I just rode it 4 miles to the gym. The wind was strong and the air was still somewhat crisp and cold. I didn’t care. I knew it would be but I still wanted to do it. I was afraid that the long winter had killed my love for the outdoors or biking, but every sensation was just as I remembered them to be. Of course I had forgotten how bothersome and painful the potholes feel in junk-ular area. But who cares. I was having a blast.

Easter Sunday has arrived, and believe it or not I felt sore all over my legs. Apparently, my workouts and my twice-a-week 5k runs on the treadmill work different muscles. No time to waste, though. We were having Easter dinner with our friends and our share of the Easter Menu was not ready yet. We colored eggs, made a raspberry cheesecake, and made two Romanian specialties: a cozonac (akin to a nut roll and panettone) and salată de boeuf, a close relative of the Russian salad. Our friends made a nice lamb roast, and served them with white beets and blue potatoes that were awesome. They had, among many other goodies, more eggs.

I started thinking of what would be the best way to deal with the leftover eggs. We have plenty, and I thought it would be awesome to make something with them. Since we were indulging so much during our Easter Weekend, I thought the best thing would be to make a healthy egg salad. I love egg salad, but I can’t really justify eating all that mayo. But I love the mayo flavor!!! To resolve my dilemma and address both my interests (health and flavor) I decided to make a dressing that uses mayo, but it’s complemented with Greek yogurt. It’s my go to alternative for potato salads and slaws! Works every time and I love how it tastes.
